Crispy Mushrooms

  • 6 pleurotus mushrooms
  • 3 tbsp flour
  • Water as needed
  • 1 tbsp Jamaican jerk seasoning
  • Panko as needed
  • Salt to taste
  • Olive oil as needed

Sauce

  • 1 tbsp ketchup
  • 1 tsp agave
  • 1 tsp Jamaican jerk seasoning

For the Burgers

  • 2 burger buns
  • Mayonnaise to taste
  • Pickles
  • Lettuce

Preparation Method

  1. In a plate, mix the flour, Jamaican jerk seasoning, and salt. Gradually add water until you get a texture similar to beaten egg.
  2. Dip each mushroom into this mixture, then coat it with panko. Repeat until all mushrooms are breaded.
  3. Place the breaded mushrooms on a baking tray lined with parchment paper, drizzle with olive oil, and bake at 210°C (410°F) until golden and crispy.
  4. Prepare the sauce by mixing all the sauce ingredients in a small bowl and stirring well.
  5. Toast the burger buns. Spread some mayonnaise on each side, add the crispy mushrooms, the prepared sauce, some lettuce, and finally, the pickles.
  6. Now just enjoy this delicious burger!

Roasted Cauliflower with Fresh Cilantro Sauce

If you haven’t, it’s time to try this delicious recipe!It’s a simple dish but with a special touch—we're using Cajun spice mix, which will turn our cauliflower into something unforgettable!With its bold and smoky flavor, Cajun seasoning is the perfect blend for divine roasts.

Ingredients

1 cauliflower

1 tbsp Cajun seasoning

1 ½ tbsp olive oil

Salt to taste

1 tbsp agave

Sauce

1 handful of cashews

1 handful of cilantro

Juice of 1 lemon

100ml water

Salt to taste

2 tbsp nutritional yeast

1 tbsp olive oil

Preparation Method

1. Bring a pot of water with salt to medium heat.

2. Place the whole cauliflower (without the leaves) in the pot and let it cook for about 10 minutes. Drain well.

3. Prepare the marinade by mixing the Cajun spice blend with olive oil, agave, and salt in a bowl. Stir well.

4. Coat the entire cauliflower with the marinade.

5. Bake at 200°C (400°F) for 40 minutes.

6. Meanwhile, prepare the sauce by blending all the ingredients in a food processor or using an immersion blender until smooth and creamy.

7. Serve the roasted cauliflower with the sauce, extra cilantro, and, if desired, some vegan parmesan. Enjoy!
